Chunky Corn Soup
This simple delicious soup has almost no calories. Of any soup I have ever tasted, this one is my favourite. If available, a desert spoon of Sambel Oelek (which is a hot Asian chilli sauce) will really kick it up.
Ingredients
- 10 ears corn on the cob
- 1 onion, finely chopped
- 1 tablespoon minced garlic
- 1 teaspoon minced chilli
- 1/3 cup fresh mint, shredded
- 1/3 cup fresh basil, shredded
- ¼ cup fresh coriander (cilantro), shredded
- Juice of 1 large lemon
- 4 cups water
- 2 tomatoes, chopped
- Cracked black pepper
Instructions
- Using a sharp knife cut the kernels from the cobs.
- Coat a large pan with cooking spray, heat and saute the onion, garlic and chilli for about 2 minutes.
- Add the corn and herbs, and cook gently for 2 minutes.
- Add the water and simmer (covered) for 20 minutes.
- Blend half the mixture in a food processor until smooth.
- Return blended mixture to the pan, add the tomatoes and the lemon juice and cook under a low simmer for 25 to 30 minutes.
- Serve with a scrunch of black pepper.
