Chunky Corn Soup


This simple delicious soup has almost no calories. Of any soup I have ever tasted, this one is my favourite. If available, a desert spoon of Sambel Oelek (which is a hot Asian chilli sauce) will really kick it up.

Ingredients

  • 10 ears corn on the cob
  • 1 onion, finely chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon minced chilli
  • 1/3 cup fresh mint, shredded
  • 1/3 cup fresh basil, shredded
  • ¼ cup fresh coriander (cilantro), shredded
  • Juice of 1 large lemon
  • 4 cups water
  • 2 tomatoes, chopped
  • Cracked black pepper

Instructions

  1. Using a sharp knife cut the kernels from the cobs.
  2. Coat a large pan with cooking spray, heat and saute the onion, garlic and chilli for about 2 minutes.
  3. Add the corn and herbs, and cook gently for 2 minutes.
  4. Add the water and simmer (covered) for 20 minutes.
  5. Blend half the mixture in a food processor until smooth.
  6. Return blended mixture to the pan, add the tomatoes and the lemon juice and cook under a low simmer for 25 to 30 minutes.
  7. Serve with a scrunch of black pepper.
