Buttermilk Pancakes


A classic buttermilk pancake recipe. Sliced ripe bananas can also be added to the batter before cooking.

Ingredients

  • 2 large eggs
  • 3 cups buttermilk
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract (optional)
  • Butter, for frying

Instructions

  1. Whisk together the egg and buttermilk.
  2. Add the soda to that mixture and whisk.
  3. Add the flour, baking powder, salt and sugar and whisk until just incorporated.
  4. Stir in the melted butter.
  5. If batter is too thick, add a little more liquid.
  6. Pour the batter in a pitcher.
  7. Set a griddle or frying pan on the stove over medium heat.
  8. Add the butter for frying and when it begins to foam, pour the batter in the pan to make pancakes of whatever size you wish.
  9. When bubbles form on top of the pancakes, flip them and cook until brown.
  10. Serve immediately.
Makes 16 (5-inch) pancakes.
