Chocolate Muffins


These muffins are very chocolaty and moist and are easy to prepare. They also freeze well.This recipe calls for mini chocolate chips, but I see no reason why they can't be omitted.

Ingredients

  • 1 package chocolate fudge cake mix
  • 1 small package chocolate Instant pudding mix
  • ¾ cup water
  • 4 large eggs, beaten
  • ½ cup vegetable oil
  • 1 cup mini chocolate chips, frozen (Optional)
  • ¼ teaspoon almond extract

Instructions

  1. Mix cake mix, pudding, water, eggs, and extract with a mixer until smooth.
  2. If using, stir in the chocolate chips and blend in thoroughly.
  3. Spray muffin tins with Pam or grease each one. Fill the tins about ¾ full.
  4. Bake at 350 degrees for about 20 minutes or until a pick inserted in the center comes out clean. Do not overbake.
