Mexican Cocktail Meatballs (Chuletas)


Ingredients:

  • 2 pounds ground beef
  • 2 cups minced parsley
  • 3 minced yellow onions (or any onions)
  • 2 large eggs, slightly beaten
  • 1 Tablespoon salt
  • ½ cup grated Parmesan cheese
  • ½ teaspoon tabasco sauce
  • 1 teaspoon black pepper
  • 3 cups dry breadcrumbs
  • Olive oil

Instructions:

  1. Mix all ingredients except crumbs and form into small cocktail size balls.
  2. Roll balls in breadcrumbs, chill well.
  3. Saute in olive oil 3 - 4 minutes.
  4. Serve with your favourite salsa.
