Mexican Cocktail Meatballs (Chuletas)
Ingredients:
- 2 pounds ground beef
- 2 cups minced parsley
- 3 minced yellow onions (or any onions)
- 2 large eggs, slightly beaten
- 1 Tablespoon salt
- ½ cup grated Parmesan cheese
- ½ teaspoon tabasco sauce
- 1 teaspoon black pepper
- 3 cups dry breadcrumbs
- Olive oil
Instructions:
- Mix all ingredients except crumbs and form into small cocktail size balls.
- Roll balls in breadcrumbs, chill well.
- Saute in olive oil 3 - 4 minutes.
- Serve with your favourite salsa.
