Cream of Broccoli Soup
Rich and creamy, this soup is hearty enough to serve as a main dish for a light supper. We use Swanson low sodium 100% fat free broth.
Ingredients
- 2 tablespoons butter
- 1/2 large white onion, chopped
- 2 pounds broccoli
- 2 cans chicken broth
- 1 can evaporated milk
- salt and pepper to taste
Instructions
- Saute onion in butter.
- Cut the tops from the broccoli, set aside.
- Peel tough ends and chop.
- Simmer stems in chicken broth for about 15 minutes, then add the tops and simmer until soft.
- Remove broccoli tops, set aside.
- Puree the rest in a blender.
- Return pureed mixture to pot, add evaporated milk, salt and pepper.
- Heat to a simmer
- Chop broccoli tops and add just before serving.
