Cream of Broccoli Soup


Rich and creamy, this soup is hearty enough to serve as a main dish for a light supper. We use Swanson low sodium 100% fat free broth.

Ingredients

  • 2 tablespoons butter
  • 1/2 large white onion, chopped
  • 2 pounds broccoli
  • 2 cans chicken broth
  • 1 can evaporated milk
  • salt and pepper to taste

Instructions

  1. Saute onion in butter.
  2. Cut the tops from the broccoli, set aside.
  3. Peel tough ends and chop.
  4. Simmer stems in chicken broth for about 15 minutes, then add the tops and simmer until soft.
  5. Remove broccoli tops, set aside.
  6. Puree the rest in a blender.
  7. Return pureed mixture to pot, add evaporated milk, salt and pepper.
  8. Heat to a simmer
  9. Chop broccoli tops and add just before serving.
