Czech Open-Faced Cheese Sandwiches

These small open-faced sandwiches are perfect for a quick snack. Laughing Cow is a soft processed cheese and is available in grocery stores in the United States.

Ingredients:

• 1 loaf French bread
• 4 wedges or three ounces Laughing Cow cheese
• 2 Tbs. mayonnaise
• 1 clove garlic, finely diced or put through press
• Pickled or fresh sweet red peppers for garnish

Instructions:

1. Whip Cheese with spoon until fluffy
2. Add mayonaisse and garlic and mix well
3. Spread mixture onto thinly-sliced French Bread
4. Garnish with small pieces of red pepper
