Czech Fried Mushrooms

A popular appetizer served with tarter sauce in Czech restaurants, smažené žampióny can also be served as an entree, sided with potatoes, salad and tarter sauce.

Ingredients:

  • 8 ounces white mushrooms (champignon, button)
  • 1 egg, lightly beaten
  • 2 tablespoons milk
  • 1 cup Italian breadcrumbs
  • 2 dashes salt
  • Vegetable Oil for frying

Instructions:

  1. Peel skin from mushrooms using a paring knife and remove stems.
  2. Add egg, milk and salt to small bowl, mix.
  3. Put breadcrumbs into another small bowl.
  4. Pour oil into deep frying pan to the depth of ½ inch. Heat to 375 degrees F.
  5. Dip each mushroom first into egg mixture and then into breadcrumbs, coating completly.
  6. Fry on one side for about 40 seconds or until golden-brown.
  7. Turn and fry on the other side for about 1 minute or until golden-brown.
  8. Drain on paper towels.
