Hawaiian Sweet and Sour Meatballs
These small bite-sized meatballs are perfect for party appetizers. Arrange them on a platter with fresh pineapple, which nicely complements the flavor.
Ingredients
For Meatballs:
- 2 pounds ground beef (90% lean)
- 1 small onion, minced
- 2 large eggs, lightly beaten
- 3/4 cup plain breadcrumbs
- 1 tablespoon worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- plain PAM
- Fresh pineapple for garnish
For Sauce:
- 2/3 cup light brown sugar
- 1 tablespoon corn starch
- 1 cup ketchup
- 1/2 cup of orange juice
- 1 tablespoon cider vinegar
- 1/2 tablespoon worcestershire sauce
Instructions
For Meatballs:
- Combine ground beef, onion, eggs, breadcrumbs, worcestershire sauce, salt and pepper in large bowl.
- Shape mixture into 1" round meatballs with hands or small ice cream scoop.
- Spray large cooling rack with PAM. Arrange meatballs on rack so that they are close together, but not touching. Spray large jelly roll pan or other pan with sides with PAM and place rack into it to avoid dripping.
- Bake for 30 minutes at 350 degrees or until lightly brown.
For Sauce
- Mix brown sugar and corn starch together in sauce pan.
- Add remaining ingredients and stir with whisk.
- Simmer over low heat, whisking constantly, until sauce comes to a boil and is slightly thickened
- Place meatballs in large glass, ceramic or stainless steel bowl (not aluminum).
- Add sauce and stir gently with wooden spoon so that all meatballs are coated.
- Cover bowl and refrigerate for a couple of hours or overnight.
- Reheat in Microwave or in covered casserole.
- Place a toothpick in each meatball and arrange on a platter with wedges of fresh pineapple.
