Herb Roasted Chicken
Ingredients:
- 1 Whole chicken
- 1 small sprig fresh rosemary
- 2 sprigs fresh thyme
- 6 stems parsley, with leaves left on
- 3 whole sage leaves
- ¼ orange, with peel left on
- 2 tablespoons butter, softened
- 1/8 teaspoon cayenne
- 6 strips bacon
- salt to taste
- pepper to taste
Instructions:
- Clean the cavity and the bird.
- Stuff the cavity with the rosemary, thyme, parsley and orange.
- Place sage leaves randomly under the breast skin.
- Brush skin with butter and season with salt and pepper and cayenne.
- Cover breast with bacon.
- Bake at 350 until center reaches 165 degrees and juices run clear.
- Let chicken rest for about 10 minutes before carving.
