Italian Mushroom Bruschetta
Shiitake, cremini, chanterelle, portobello and other mushrooms can be used for this recipe.
Ingredients:
- 1 Loaf of Ciabatta or Italian bread
- 1 Whole Clove of Garlic, Peeled
- 2 tablespoons olive oil
- 3 Cups Mixed Mushrooms, Sliced
- ½ Small Onion, Finely diced
- 3 Plum Tomatoes, Chopped
- 2 tablespoons fresh basil, roughly torn
- 1 cup Fresh Mozzarella, grated
- Extra Virgin Olive Oil for drizzling
Instructions:
- Slice the loaf of bread, on the bias, into 3/4-inch slices.
- Toast the ciabatta bread and rub one side with the peeled clove of garlic.
- Heat the oil in a large frying pan and fry the onion until it is slightly glassy.
- Add mushrooms and cook until they begin to soften, about 5 minutes.
- Remove from the heat and add tomatoes and season to taste.
- Stir in most of the basil, reserving some for garnish.
- Spoon the mixture evenly on top of the toasted bread.
- Sprinkle with mozzarella and toast under the grill for a few seconds until the cheese begins to melt.
- Place on a serving dish and drizzle with a little extra virgin olive oil. Serve immediately.
