Marjorie's Chocolate Sponge Cake


This is my mother's recipe for a chocolate sponge, and from my earliest memories, it was not just an absolute winner at home, but whenever it was brought to parties, dinners etc. it was the absolute hit of all the cakes and sponges.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon butter
  • ½ cup boiled water
  • ½ cup cocoa
  • Pinch salt
  • Whipping Cream

Instructions

  1. Preheat oven to 390 degrees F.
  2. Warm the eggs slightly and beat in the sugar.
  3. Sift the flour 4 times and add a pinch of salt.
  4. Boil the water, add the butter and cocoa while beating constantly. Add the flour.
  5. Gently fold the egg/sugar mix into the chocolate/flour mix and pour the mixture into two pre-greased cake-tins halfway up the tin (as it will rise).
  6. Bake at 390 degrees for 10 minutes and then allow to cool.
  7. Ease gently from the tins and allow to cool on a baking rack.
  8. Beat just enough cream to stay between the two layers of the sponge and ice with chocolate icing studded with walnuts.
