Pineapple Cake

Ingredients


For Cake:
  • 2 eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 tablespoons baking soda
  • 1 teaspoon vanilla
  • ½ cup chopped nuts
  • 1 large (20 ounce) can crushed pineapple (juice and all)
For Icing:
  • 8 ounces cream cheese
  • ¼ cup butter
  • 1 teaspoon vanilla
  • 3 cups powdered sugar
  • milk, only as needed

Instructions


For Cake:
  1. Mix all ingredients.
  2. Pour into greased and floured 13 by 9 inch pan.
  3. Bake at 350 degrees for 40 minutes, or until just done.
  4. Cool and frost.
For Icing:
  1. Beat all ingredients except milk until smooth.
  2. Add milk only if necessary to get the right consistency.
  3. Frost cake.
Best when kept in the refrigerator.
