Whoopie Pies
A traditional New England dessert, a whoopie pie consists of a cream filling between two small cakes.
Ingredients
For Cakes- 1/3 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1/3 cup unsweetened cocoa
- 1 teaspoon baking soda (regular)
- 1/4 teaspoon salt
- 3/4 cup milk
- non-stick cooking spray
- 1 cup whole milk
- 2 tablespoons cornstarch
- 1 cup butter
- 1 cup superfine sugar
- dash salt
- 1 teaspoon vanilla
Instructions

For Cakes
- Preheat oven to 350 degrees F.
- Spray cookie sheet with non-stick cooking spray. Set aside.
- Add butter and sugar to large bowl and cream together.
- Add vanilla and egg. Beat well.
- Sift flour, cocoa, baking soda and salt together to form dry mixture.
- Add 1/3 of the dry mixture to the mixing bowl, mix. Add 1/2 of the milk and mix.
- Add another 1/3 of the dry mixture, mix. Add the rest of the milk and mix.
- Add the rest of the dry mixture and mix to form soft dough.
- Drop dough onto the cookie sheet in two tablespoon-sized balls or, for best results use #24 ice cream scoop. Do not flatten.
- Bake for about 10 minutes or until top springs back when lightly touched with finger.
- Let cool before icing.

For Filling
- Add cornstarch and milk to saucepan. Cook unitl thick, stirring constantly.
- Pour into bowl and cover with saran wrap, pressing it down against the milk mixture so that it covers the surface. Allow it to cool.
- Beat butter, sugar, salt and vanilla together until it is light and fluffy. It takes about 5 minutes.
- Add milk mixture to other ingredients and beat until it is the consistancy of thick whipped cream. It take about 5 minutes. sandwich two tablespoons (or if you have the scoop, use one scoop) of filling between the bottoms of two of the cookie.
