Buttermilk Pancakes
A classic buttermilk pancake recipe. Sliced ripe bananas can also be added to the batter before cooking.
Ingredients
- 2 large eggs
- 3 cups buttermilk
- 1 teaspoon baking soda
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons sugar
- 4 tablespoons melted butter
- 1 teaspoon vanilla extract (optional)
- Butter, for frying
Instructions
- Whisk together the egg and buttermilk.
- Add the soda to that mixture and whisk.
- Add the flour, baking powder, salt and sugar and whisk until just incorporated.
- Stir in the melted butter.
- If batter is too thick, add a little more liquid.
- Pour the batter in a pitcher.
- Set a griddle or frying pan on the stove over medium heat.
- Add the butter for frying and when it begins to foam, pour the batter in the pan to make pancakes of whatever size you wish.
- When bubbles form on top of the pancakes, flip them and cook until brown.
- Serve immediately.
