Chocolate Muffins
These muffins are very chocolaty and moist and are easy to prepare. They also freeze well.This recipe calls for mini chocolate chips, but I see no reason why they can't be omitted.
Ingredients
- 1 package chocolate fudge cake mix
- 1 small package chocolate Instant pudding mix
- ¾ cup water
- 4 large eggs, beaten
- ½ cup vegetable oil
- 1 cup mini chocolate chips, frozen (Optional)
- ¼ teaspoon almond extract
Instructions
- Mix cake mix, pudding, water, eggs, and extract with a mixer until smooth.
- If using, stir in the chocolate chips and blend in thoroughly.
- Spray muffin tins with Pam or grease each one. Fill the tins about ¾ full.
- Bake at 350 degrees for about 20 minutes or until a pick inserted in the center comes out clean. Do not overbake.
