Classic Fudge

Ingredients

  • 2 cups sugar
  • 3/4 cup milk
  • 2 1-ounce squares unsweetened baking chocolate
  • 1 teaspoon corn syrup
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • Dash salt
  • Extra butter for coating

Instructions

  1. Butter sides of 2-quart saucepan.
  2. Add sugar, milk, chocolate, corn syrup and salt.
  3. Stir over medium heat until sugar dissolves and mixture begins to boil a bit.
  4. Turn down heat a little and cook to soft ball stage.
  5. Remove the pan from stove and add butter. Do not stir.
  6. Let pan sit undisturbed until the bottom of pan is warm (as opposed to hot). Add vanilla.
  7. Butter a cookie sheet.
  8. Stir the fudge just to the point where it becomes thicker, lighter in color, and begins to lose its gloss.
  9. Pour immediately onto the cookie sheet.
  10. Cut into 1-inch cubes with sharp knife while still warm.
