Herb Roasted Chicken


Ingredients:

  • 1 Whole chicken
  • 1 small sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 6 stems parsley, with leaves left on
  • 3 whole sage leaves
  • ¼ orange, with peel left on
  • 2 tablespoons butter, softened
  • 1/8 teaspoon cayenne
  • 6 strips bacon
  • salt to taste
  • pepper to taste

Instructions:

  1. Clean the cavity and the bird.
  2. Stuff the cavity with the rosemary, thyme, parsley and orange.
  3. Place sage leaves randomly under the breast skin.
  4. Brush skin with butter and season with salt and pepper and cayenne.
  5. Cover breast with bacon.
  6. Bake at 350 until center reaches 165 degrees and juices run clear.
  7. Let chicken rest for about 10 minutes before carving.
