Italian Mushroom Bruschetta

Shiitake, cremini, chanterelle, portobello and other mushrooms can be used for this recipe.

Ingredients:

  • 1 Loaf of Ciabatta or Italian bread
  • 1 Whole Clove of Garlic, Peeled
  • 2 tablespoons olive oil
  • 3 Cups Mixed Mushrooms, Sliced
  • ½ Small Onion, Finely diced
  • 3 Plum Tomatoes, Chopped
  • 2 tablespoons fresh basil, roughly torn
  • 1 cup Fresh Mozzarella, grated
  • Extra Virgin Olive Oil for drizzling

Instructions:

  1. Slice the loaf of bread, on the bias, into 3/4-inch slices.
  2. Toast the ciabatta bread and rub one side with the peeled clove of garlic.
  3. Heat the oil in a large frying pan and fry the onion until it is slightly glassy.
  4. Add mushrooms and cook until they begin to soften, about 5 minutes.
  5. Remove from the heat and add tomatoes and season to taste.
  6. Stir in most of the basil, reserving some for garnish.
  7. Spoon the mixture evenly on top of the toasted bread.
  8. Sprinkle with mozzarella and toast under the grill for a few seconds until the cheese begins to melt.
  9. Place on a serving dish and drizzle with a little extra virgin olive oil. Serve immediately.
