Lemon Cheesecake Bars
Ingredients
- l box yellow cake mix (2 layer)
- 8 ounce package cream cheese, softened
- 2 eggs
- ¼ cup sugar
- l tablespoon of fresh or bottled lemon juice
- l/3 cup vegetable oil
Instructions
- Preheat oven to 350.
- Mix cake mix, l of the eggs and the oil until crumbly.
- Reserve l cup of this mixture for later.
- Pat the remaining mixture lightly into a 9 by 13 ungreased baking pan.
- Bake l5 minutes.
- While this is baking, beat cream cheese, sugar, lemon juice and the remaining egg until light and smooth. Spread over baked crumb mixture.
- Sprinkle reserved crumb mixture on top.
- Bake for l5 additional minutes until light golden brown. Be careful not to overbake.
- Chill thoroughly and cut into bars.
