Peach Pecan Muffins


Frozen or canned peaches may also be used in this recipe: just whir them in a food processor to break them up a little - make sure you have a cup of pulp.

Ingredients

  • 1½ cups All-purpose flour
  • ½ cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Salt
  • ½ cup Butter, melted
  • ¼ cup Milk
  • 1 Egg
  • 2 medium peaches, peeled and diced
  • ½ cup Pecans, chopped

Instructions

  1. Combine all the dry ingredients.
  2. Combine all the wet ingredients.
  3. Stir the two together just until moistened.
  4. Fold in peaches and pecans.
  5. Spoon into muffin cups.
  6. Sprinkle with additional cinnamon and sugar if desired.
  7. Bake at 400 degees for 20 to 25 minutes.
