Whoopie Pies


A traditional New England dessert, a whoopie pie consists of a cream filling between two small cakes.

Ingredients

For Cakes
  • 1/3 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa
  • 1 teaspoon baking soda (regular)
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • non-stick cooking spray
For Filling
  • 1 cup whole milk
  • 2 tablespoons cornstarch
  • 1 cup butter
  • 1 cup superfine sugar
  • dash salt
  • 1 teaspoon vanilla

Instructions

    For Cakes
  1. Preheat oven to 350 degrees F.
  2. Spray cookie sheet with non-stick cooking spray. Set aside.
  3. Add butter and sugar to large bowl and cream together.
  4. Add vanilla and egg. Beat well.
  5. Sift flour, cocoa, baking soda and salt together to form dry mixture.
  6. Add 1/3 of the dry mixture to the mixing bowl, mix. Add 1/2 of the milk and mix.
  7. Add another 1/3 of the dry mixture, mix. Add the rest of the milk and mix.
  8. Add the rest of the dry mixture and mix to form soft dough.
  9. Drop dough onto the cookie sheet in two tablespoon-sized balls or, for best results use #24 ice cream scoop. Do not flatten.
  10. Bake for about 10 minutes or until top springs back when lightly touched with finger.
  11. Let cool before icing.
    For Filling
  1. Add cornstarch and milk to saucepan. Cook unitl thick, stirring constantly.
  2. Pour into bowl and cover with saran wrap, pressing it down against the milk mixture so that it covers the surface. Allow it to cool.
  3. Beat butter, sugar, salt and vanilla together until it is light and fluffy. It takes about 5 minutes.
  4. Add milk mixture to other ingredients and beat until it is the consistancy of thick whipped cream. It take about 5 minutes. sandwich two tablespoons (or if you have the scoop, use one scoop) of filling between the bottoms of two of the cookie.
Makes about 10 Whoopie Pies
