Ground Beef Kebabs
These skewered meatballs are Middle Eastern in origin and are excellent when cooked on a grill. Use flat metal skewers for better adhesion and to prevent meatballs from slipping back around when they are turned.

Ground Beef Kebabs
Ingredients
- 1 pound Lean Ground Beef
- 1/4 cup Fresh Parsley, chopped
- 1/4 pound Fresh Cilantro, chopped
- 1 Medium Onion, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground pepper
- Salt to taste
Instructions
- Add all ingredients to large bowl, mix well, and let stand for 1 hour to blend flavors.
- Using about 1/4 cup of mixture for each meatball, mold onto skewers with hand into elongated, sausage-like shapes.Tapering the ends will help them to stick better.
- Place skewers onto the grill or on a rack over a campfire.
- Turn frequently until meat is nicely browned on all sides, about 15 minutes.
