Ground Beef Kebabs


These skewered meatballs are Middle Eastern in origin and are excellent when cooked on a grill. Use flat metal skewers for better adhesion and to prevent meatballs from slipping back around when they are turned.

Ground Beef Kebabs


Ingredients

  • 1 pound Lean Ground Beef
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 pound Fresh Cilantro, chopped
  • 1 Medium Onion, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground pepper
  • Salt to taste

Instructions

  1. Add all ingredients to large bowl, mix well, and let stand for 1 hour to blend flavors.
  2. Using about 1/4 cup of mixture for each meatball, mold onto skewers with hand into elongated, sausage-like shapes.Tapering the ends will help them to stick better.
  3. Place skewers onto the grill or on a rack over a campfire.
  4. Turn frequently until meat is nicely browned on all sides, about 15 minutes.

Makes about 8 servings
